Keto Coconut Pancakes Recipe

Ingredients

  • 1/4 cup Unsalted Butter melted
  • 1/3 cup Coconut Cream
  • 3 Eggs
  • 1 tsp Stevia
  • 1/2 tsp Vanilla Extract
  • Pinch Salt
  • 1/3 cup Coconut Flour
  • 1/2 tsp Baking Powder

Instructions

  1. Whisk the wet ingredients in a large mixing bowl
  2. Add in the dry ingredients and mix to combine
  3. Set a side for a couple of mins to thicken. If the batter is too thick, add a small additional amount of coconut cream
  4. Lightly butter a frying pan and heat on medium
  5. Spoon large tablespoons of batter onto the frying pan. Cook for approximately 2-3 minutes each side, turning over when the batter has risen and forms a skin

Serving Ideas and Options

  • Top with butter, cinnamon, blueberries and lemon juice
  • Fry some bacon and add sugar free maple syrup
