Keto Coconut Pancakes Recipe
Ingredients
- 1/4 cup Unsalted Butter melted
- 1/3 cup Coconut Cream
- 3 Eggs
- 1 tsp Stevia
- 1/2 tsp Vanilla Extract
- Pinch Salt
- 1/3 cup Coconut Flour
- 1/2 tsp Baking Powder
Instructions
- Whisk the wet ingredients in a large mixing bowl
- Add in the dry ingredients and mix to combine
- Set a side for a couple of mins to thicken. If the batter is too thick, add a small additional amount of coconut cream
- Lightly butter a frying pan and heat on medium
- Spoon large tablespoons of batter onto the frying pan. Cook for approximately 2-3 minutes each side, turning over when the batter has risen and forms a skin
Serving Ideas and Options
- Top with butter, cinnamon, blueberries and lemon juice
- Fry some bacon and add sugar free maple syrup
